Or at least that is what Eric called it!
Another Real Simple recipe... Cod and Corn Chowder! The longest part was chopping the potatoes small. The rest was a breeze. I can't believe I am cooking and we are eating this well when I am only spending less than 20 minutes each night in the kitchen!
Ramblings of a Cooking Addict
For 2012 this will be my start to a Food Blog. I've wanted to share my recipes & cooking expeditions for a while now, and finally have walked into the world of food blogging :) Hope you enjoy!

Steak Carrots & Whipped Goat Cheese
Yum, Steak, Carrots & Whipped Goat Cheese!
For this meal, I did all of the prep (chopped carrots and let them sit in the vinegar honey mix in the pan, and whipped the goat cheese) before I went to pick up my husband and daughter. When we all got home, I think it took less than 10 minutes to cook and finish everything. The carrots were excellent and the meal was simple but tasty!

Prosciutto Salad
Thankfully the next night was even simpler. Prosciutto Salad. I think I was able to throw the whole thing together in less than 10 minutes. I cheated and just live-dressed the salad (just squeezed the lemons over the top), and I also just used salad mix instead of frissee, but I did have the endives. Simple, but actually surprisingly filling enough, we enjoyed this fast meal!

Baked Eggs and Kale
Reviving my old blog!! I may go back and post some other cooking photos, but for now, I will start in the recent future :) So with a new baby (see my other blog!) I dont have anywhere near as much time on my hands. Now granted, I am currently unemployed, but job hunting and a whole bunch of other stuff has kept me plenty busy. So I was incredibly excited to see my Real Simple Magazine arrive with a month of 20 minute dinners!! OMG I was beyond excited. It doesnt get much simpler to cook fun & interesting food!
First up was Baked Eggs with Kale. It passed the simple test and was definitely faster than 20 minutes to make! My only recommendation, if you like soft yokes, make sure to get the eggs into the sauce super quick and cook for only 10 minutes. I cooked for 12, and while the last couple eggs had almost soft yolks, the first few were pretty firmed up. We served ours with sliced baguette.

Red Quinoa & Lentil Pilaf 2/28
So... I'm just catching up on my food blog, but I took all of the photos, so I figured it was worth sharing! Back at the end of February I made a Red Quinoa and Lentil Pilaf with a recipe from Food and Wine. It's a Vegan dish, which often has people wary - if there is no meat, will I be full? But I will say, this dish was MORE than filling! And the leftovers were amazing as well!
I was out of Cauliflower, so I just used Chickpeas to fill up the dish. The fresh parsley and marcona almonds complimented the dish nicely, while the lentils and chickpeas gave it a very hearty texture. We will definitely be making this one again!

Chicken Barley Stew w/Lemon & Tarragon 2/22
Another Food & Wine recipe that is an incredibly hearty winter recipe, but had a little citrus kick that made it almost light and flavorful is the Chicken and Barley Stew recipe I found. I've been trying more and more to incorporate different kinds of grains and other things into my cooking, and this offered an easy way to try out a barley recipe.
It was pretty easy to throw together, and the leftovers ended up so thick and rich that they were great to have for lunch or dinner!
You can see I actually squeezed in the lemon, but then added the entire half of it for the last 10 minutes of cooking to give it some extra zing.

Sausage Cauliflower & Kale Pot Pie 2/21
The magazines were big into Cauliflower this month, and I cannot say I minded. I found a recipe for Sausage Cauliflower and Kale Pot Pie in the Real Simple Magazine, and it looked simple and easy to make, so I grabbed the ingredients for another Cauliflowerfest! I followed the recipe pretty exactly, with the exception of substituting chicken sausage, and it definitely came out really good.
