Corn on the Cod Chowder

Or at least that is what Eric called it!

Another Real Simple recipe... Cod and Corn Chowder!  The longest part was chopping the potatoes small.  The rest was a breeze.  I can't believe I am cooking and we are eating this well when I am only spending less than 20 minutes each night in the kitchen!

Steak Carrots & Whipped Goat Cheese

Yum, Steak, Carrots & Whipped Goat Cheese!

For this meal, I did all of the prep (chopped carrots and let them sit in the vinegar honey mix in the pan, and whipped the goat cheese) before I went to pick up my husband and daughter.  When we all got home, I think it took less than 10 minutes to cook and finish everything.  The carrots were excellent and the meal was simple but tasty!

Prosciutto Salad

Thankfully the next night was even simpler. Prosciutto Salad.  I think I was able to throw the whole thing together in less than 10 minutes.  I cheated and just live-dressed the salad (just squeezed the lemons over the top), and I also just used salad mix instead of frissee, but I did have the endives.  Simple, but actually surprisingly filling enough, we enjoyed this fast meal!

Baked Eggs and Kale

Reviving my old blog!! I may go back and post some other cooking photos, but for now, I will start in the recent future :)  So with a new baby (see my other blog!) I dont have anywhere near as much time on my hands.  Now granted, I am currently unemployed, but job hunting and a whole bunch of other stuff has kept me plenty busy.  So I was incredibly excited to see my Real Simple Magazine arrive with a month of 20 minute dinners!! OMG I was beyond excited.  It doesnt get much simpler to cook fun & interesting food!

First up was Baked Eggs with Kale.  It passed the simple test and was definitely faster than 20 minutes to make!  My only recommendation, if you like soft yokes, make sure to get the eggs into the sauce super quick and cook for only 10 minutes.  I cooked for 12, and while the last couple eggs had almost soft yolks, the first few were pretty firmed up.  We served ours with sliced baguette.
